Brioche Tiramisu Donuts
Ingredients
Brioche Dough
- 1 cup Milk
- 6 tbsp Unsalted Butter melted
- 2 1/4 tsp Yeast
- 2 Eggs
- 4 1/2 cups Flour all purpose
- 1/4 cup Sugar white
- 1 tsp salt
- 1/4 tsp cinnamon
Frying
- 4 cups Vegetable Oil may need more or less depending on your pot
Coating
- 1 cup Sugar
- 2 tsp Cinnamon Powder
Fillings
- 2 cups Heavy Cream
- 4 oz Mascarpone Cream
- 1/4 cup sugar
- 2 tbsp Instant Coffee Powder
Instructions
Brioche Dough
- I used a kitchen aid to make the dough, it’s much faster but not necessary. You could knead it all by hand. Add the milk, melted butter, and yeast & set aside.Combine flour, sugar, salt, and cinnamon. while mixing, add the milk mixture to the dry ingredients I used the dough attachment for 2-3 minutes. Add the eggs one at a time and continue beating until the dough starts to pull away from the side of the bowl.Add the dough ball into an oiled bowl and set aside to rise with a kitchen towel on top. This should take about 1-1.5 hours.
- While the donuts are rising, whip together the ingredients for the filling until you have stiff peaks. Add the whipping cream, mascarpone, and sugar all at once and use a hand mixer or whisk to combine until you have stiff peaks. Be careful not to over mix! You are looking for soft peaks.
Frying the Donuts
- Kneed the dough and roll it out. Use a cookie cutter or cup to cut the donuts. Place the donuts on a lined baking sheet and let them rise for another half hour.Add 3-4 inches of oil into a pan and heat. You’re looking for 350F, if the oil is too hot the outside will cook faster than the inside. drop in your donuts, and flip after 2-3 minutes.Place them on a cooling rack to cool.
Assembly
- Combine sugar, cocoa powder, cinnamon in a dish. Use this to coat your donuts. Make a hole in the donut using a skewer or chop stick. Add the coffee whipped cream into a piping bag. Pipe in the whipped cream and sprinkle with instant coffee for that classic tiramisu look!

Brioche Tiramisu Donuts Notes
Here are a few key factors in making sure your donuts are successful:- Check your yeast! Add a tsp of yeast to warm water to check if it is *alive*. Alive yeast will be nice and bubbly!
- Do not over fry the donuts. 2-3 min on each side MAX. Your donuts will absorb an insane amount of oil after that point.
- Do not over whip your cream! You will be tempted to keep going after you get stiff peaks, but once you go too far you are not able to fix it and will have to start all over.
