Pistachio Croissants
My favorite type of desserts are the ones that come together within minutes. I love to bake, but I also don’t always have the time to spend hours baking things. So, these pistachio croissants are perfect for “I don’t have time to bake” type of nights. The best part is that they are a crowd-pleaser, absolutely delicious, and light. You’ll find yourself going back for more every time!

Pistachio Croissants
Ingredients
- 4 Croissants store bought
Whipped Pistachio Filling
- 2 cups Heavy Cream
- 4 oz Mascarpone Cheese
- 2 tbsp Pistachio Paste
Topping
- 2 tbsp Pistachio Paste
- 1/2 cup Pistachios
Instructions

- Buy store brought croissants.
- I bought the large pack from Costco, but you could opt for smaller ones and make more!
Whipped Pistachio Filling
- Add heavy cream, mascarpone, and the pistachio paste into a bowl.
- If you want your filling to be sweeter, you can add 1/4 cup sugar. I opted not to because my family prefers less sweet desserts!
- Whisk together or use a hand mixer to combine until you get stiff peaks.
Assembly
- To assemble, cut open the croissants.
- Pipe or spread the filling inside and sprinkle crushed pistachio nuts inside.
- Drizzle pistachio paste on top.
