Brownie Base Cookies & Cream Cheesecake
I am the baker, who doesn’t eat her own desserts. Yes, you heard that right. I am a savory food lover through and through, but I love to bake and make new sweet creations – this cheesecake is no exception!
The inspiration for this cheesecake came from the Cookies & Cream Spread I found at Walmart. I knew I wanted to incorprate it into a dessert and I thought a cheesecake would be the perfect way to go.
NO FAIL CHEESECAKE BASE
My cheesecake base recipe is NO FAIL. It is easy, doesn’t require a water bath, and comes together within minutes. I am not a fan of no bake cheesecakes, the texture never compares to the real deal. If you’ve never made a baked cheesecake, this is for you!
Brownie Base Cookies & Cream Cheesecake
Equipment
- 1 9 inch spring form pan
Ingredients
Brownie Mix
- 1 box brownie mix + ingredients needed to make the box
- 1 box sandwich cookies
Cheesecake Base
- 2 blocks cream cheese 16 oz
- 1/4 cup white sugar 50 g
- 1 egg
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 1 jar cookies & cream spread optional
Instructions
- Preheat the oven to 350 degrees F
- Prepare your springform pan by spraying it with a non-stick baking spray
Brownie Base
- Follow the instructions on your boxed brownie mix and then pour it into the springform pan
- Add a layer of sandwich cookies on top of the brownie mix and set aside while you make your cheesecake layer
Cheesecake Base
- Add your SOFTENED cream cheese into a bowl and whisk until smooth
- Add the sugar, egg, vanilla extract, and lemon juice
- Combine until fully smooth
- Add a few spoonfuls of the cookies & cream spread OR crushed up sandwich cookies
- Pour the mixture directly on top of the brownies and bake
- ** I baked mine for about an hour, but continue to check because the time my vary!
- Allow for your cheesecake to cool completely before you slice it!
