Brownie Base Cookies & Cream Cheesecake

A delicious combination of a brownie + cheesecake!

Equipment

  • 1 9 inch spring form pan

Ingredients
  

Brownie Mix

  • 1 box brownie mix + ingredients needed to make the box
  • 1 box sandwich cookies

Cheesecake Base

  • 2 blocks cream cheese 16 oz
  • 1/4 cup white sugar 50 g
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1 jar cookies & cream spread optional

Instructions
 

  • Preheat the oven to 350 degrees F
  • Prepare your springform pan by spraying it with a non-stick baking spray

Brownie Base

  • Follow the instructions on your boxed brownie mix and then pour it into the springform pan
  • Add a layer of sandwich cookies on top of the brownie mix and set aside while you make your cheesecake layer

Cheesecake Base

  • Add your SOFTENED cream cheese into a bowl and whisk until smooth
  • Add the sugar, egg, vanilla extract, and lemon juice
  • Combine until fully smooth
  • Add a few spoonfuls of the cookies & cream spread OR crushed up sandwich cookies
  • Pour the mixture directly on top of the brownies and bake
  • ** I baked mine for about an hour, but continue to check because the time my vary!
  • Allow for your cheesecake to cool completely before you slice it!
