Chocolate Crepe Rolls

Do you have those family members who only like desserts that aren’t overly sweet? That describes my entire family, including me! These chocolate crepe rolls are light and airy, and the best part is how easy they are to make!

Chocolate Crepe Rolls

Light and airy crepe rolls!

Ingredients
  

Crepes

  • 1 cup flour all purpose
  • 2 tbsp cocoa powder
  • 1/4 cup sugar
  • 3/4 cup milk
  • 1/4 cup water
  • 2 large eggs

Whipping Cream

  • 2 cups heavy cream
  • 1/4 cup sugar
  • 4 oz mascarpone cheese
  • 1 tsp vanilla extract

Fresh Fruits

  • 1 pint strawberries chopped

Instructions
 

Crepes

  • Combine the dry ingredients: flour, sugar, cocoa powder and mix.
  • Add the wet ingredients: water, milk, eggs.
  • Whisk all together until smooth and set aside while you heat a large nonstick skillet.
  • Once the skillet is hot, pour 1/4 cup of batter and quickly roll the skillet until the crepe is spread thin. This should take no longer than a minute or two.
  • Flip the crepe and cook for another 30 seconds.
  • Flip onto a plate and allow for them to completely cool.

Whipped Cream

  • Add the heavy whipping cream, sugar, vanilla extract, and mascarpone cheese into a bowl and whisk until you get stiff peaks.

Assembly

  • To assemble, slightly overlap two crepes.
  • Pipe the whipped cream inside (do NOT over fill).
  • Add the chopped strawberries.
  • Roll one side of the crepe like a burrito. Fold in all sides to ensure the whipped cream doesn't leak.
  • Decorate with more whipped cream and a strawberry.
